Methods:
1. Add cubed chicken to bowl and add curry powder, turmeric, chili and garam masala. Mix in well then add ½ of the coconut milk (save the rest for later.) Mix in and let it marinate while doing next steps.
2. Add diced onions to large pot with grapeseed oil, cook on medium until translucent. Add diced garlic and ginger to onions and stir continuously for 3 minutes, until combined well. Add chopped tomatoes, put heat on low, add splash of water, close lid and let sit for 5-8 minutes. Stir well while on medium heat for 3 minutes.
3. Add chicken and coconut milk mixture to pot. Add another splash to water, close lid and let simmer on low for 10-15 minutes. Add the rest of the coconut milk and all cashew nuts, stir in well, and then add cinnamon powder. Add cauliflower pieces let simmer for 7 minutes on medium without lid. Add salt and pepper. Add lid and simmer on low for 10 minutes.
When chicken is tender (check with fork) add cilantro. Serve with rice or with gluten free tortilla.
